Description:

Your day begins with a morning trip to the market to purchase all required herbs, produce and meats. Learn substitutes for what you might not be able to get at home. Appreciate different cuts of meat, types of herbs and their combinations. Experience marketplace pageantry. Return to our large traditional kitchen where Dona Lancha will begin to show you how to prepare your choice of Oaxacan comida, be it one of the seven moles, stuffed chiles, lesser known delicacies, etc. Assist in the preparation, listen to and tell your own intersting stories and anecdotes, make notes on the prepared recipe sheets, and even imbibe a bit. Then sit down with one of the country's pre-eminent native chefs to one of the best meals you've ever experienced, anywhere. Unlimited soft and alcoholic beverages are included, as well as hotel pick-up and drop-off. Between 1 and 5 students only per class.

Responsible Action:

Take travelers to the local villages and markets, and expain the important of and how the townspeople maintain their cultural traditions. We encourage our guests and touring clients to get out to the villages and into the countryside to experience the real cultures. We have a 15 page guest guide to help facilitate the foregoing. We encourage our guests to participate in charitable deeds such as donating clothing and money, and working at children\'s facilities for \"street children\" if they are with us for more than a week.
